Blueberry and Pomegranate

Blueberries are superfoods and one of the best berries to include in your diet. Delicious with crunchy pomegranate seeds and some of the flesh. Pomegranates have been used for medicinal purposes for thousands of years, and are now proven to be effective for healthy hearts and levelling blood pressure. Whatever happens – never throw away the seeds! They are full of nutrition, taste lovely and crunchy and can be used in salads or many other dishes. Full of fibre, they are also great for the digestive system.

Makes: Up to 2 bottles – for 1 bottle, simply halve the recipe. Making 2 bottles at a time prevents fruit wastage.

Ingredients:

Small box of plump blueberries (approximately 150g)

1 fresh pomegranate, seeds and flesh removed

Coconut water

Method:

Place the pomegranate flesh and seeds, along with the blueberries into your water bottle.

Combine with coconut water and leave to infuse in the fridge for as long as you can (at least 2 hours).

Use in your water bottle, or pour into a jug with some extra fruit. So that you get all the goodness, remove the water bottle lid when all the liquid has gone, and pour the remaining juicy bits into your mouth – yummy!
